I'm looking to find out what users type in when they are looking for bedding, bed linen? is there a way I Google can tell me other than 'trends' which just gives me when this word was typed in?

How are you using the Google keyword tool?

If you type in a word that is very generic you will get variations and the averge local searches per month.

Alternatively ask friends and family what they would type in. If you are on facebook put a post up with a picture of something and ask them what they would type in to find it :)

If you search for "All Summer Bed Linen" you get a bloke who looks like Jesus.

As Kerry mentioned, the most popular way is to use the Google Keyword Tool. Another option is to use Google Insights which provides a bit more information on how the terms are trending and allows you to segment by country. I've hyperlinked specific searches for your term within. The higher the competition rating for a word or phrase, the more difficult it may be for you to compete--so when selecting your terms, consider the competition rating as well as a term's popularity.

Start by making a list of your competitors, enter their url into the Google Keyword Tool and see what keywords they're optimised for :(
